Smokey Cheese, Caramelized Onion, Spinach & Black Bean Quesadilla

This quesadilla is a fun one because the ingredients are not your average quesadilla kinda of ingredients — yet somehow the flavors totally work together.

Mise all ready to go!

This deliciously smokey gouda-flavored cheese sauce is made with cashews, nutritional yeast, beer, miso paste and other flavorings. It’s a great sauce and it can easily be used as a sauce for many other dishes.

Once the cheese sauce is made, there is a schwack of fresh spinach mixed in.

Once all of your mise is ready, it’s just a matter of assembling the quesadillas and then frying them up.

While we get that the idea of a caramelized onions and mango salsa might seem strange, we did warn you that this was an odd pairing, but we think  the ingredients here really work together — sort of like a party that you didn’t think you were going to have fun at, but surprisingly you had an awesome time.

Besides, isn’t life about trying new things? It’s good to get out of your flavor-comfort-zone every now and again.
